Ingredients

  • 2 cups cooked chicken breast, finely chopped or shredded
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 3 tbsp mayonnaise
  • 3 tbsp all-purpose flour (or cornstarch for a lighter texture)
  • 2 tbsp fresh parsley or dill, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2–3 tbsp oil, for pan-frying

Method

  1. Prepare the Chicken Mixture
    • In a mixing bowl, combine the chopped chicken, cheese, eggs, mayonnaise, flour, parsley, garlic, paprika, salt, and pepper.
    • Stir until everything is well mixed and forms a thick, spoonable batter.
  2. Heat the Pan
    • Add 2–3 tablespoons of oil to a large skillet and heat over medium heat.
  3. Cook the Fritters
    • Scoop about 2 tablespoons of the mixture into the skillet, gently flattening each portion with the back of a spoon.
    • Cook for 3–4 minutes per side, until golden brown and crispy.
    • Repeat with the remaining mixture, adding more oil as needed.
  4. Serve
    • Transfer to a paper towel–lined plate to remove excess oil.

Storage

  • Refrigerator: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or oven to bring back the crispiness.
  • Freezer: Freeze uncooked fritters on a tray, then transfer to a freezer bag. Cook directly from frozen, adding 2–3 extra minutes per side.
