Classic Snowball Cookies

Snowball cookies, also known as Russian Tea Cakes or Mexican Wedding Cookies, are a timeless treat made with just a handful of simple ingredients. These bite-sized, buttery cookies are packed with finely chopped nuts and rolled in powdered sugar, giving them their snowy, festive look. Perfect with coffee, tea, or as part of a holiday cookie tray, they’re a classic for good reason.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup powdered sugar (plus more for rolling)
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • ¼ tsp salt
  • 1 cup finely chopped pecans or walnuts

Instructions

  1. Preheat Oven
    Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Dough
    In a large bowl, beat butter and powdered sugar until light and fluffy. Mix in vanilla. Add flour and salt gradually until combined, then stir in nuts.
  3. Shape Cookies
    Roll dough into 1-inch balls and place on the prepared baking sheet about 1 inch apart.

  5. Roll in Sugar

  • Freeze baked cookies for up to 2 months. Thaw at room temperature and re-roll in powdered sugar if needed before serving.
