  • 1 packet taco seasoning mix (or 2 tbsp homemade)
  • ¾ cup (180ml) water
  • 1 cup (250g) canned black beans, drained and rinsed (optional)
  • 1 cup (250g) corn kernels (optional)
  • 1 ½ cups (360ml) salsa or taco sauce

For the Layers:

  • 6 large flour tortillas (or corn tortillas, cut to fit your dish)
  • 2 cups (200g) shredded cheddar or Mexican cheese blend
  • 1 ½ cups (360ml) sour cream

Optional Toppings:

  • Sliced green onions
  • Diced tomatoes
  • Chopped cilantro
  • Sliced black olives
  • Jalapeños

Instructions

1. Cook the Beef

  1. In a large skillet, cook ground beef and chopped onion over medium heat until browned.
  2. Drain any excess fat.
  3. Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
  4. Stir in black beans, corn, and salsa. Mix well and remove from heat.

2. Layer the Lasagna

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch (23×33 cm) baking dish.
  3. Place 2 tortillas on the bottom (cut to fit).
  4. Spread ⅓ of the meat mixture evenly over the tortillas.
  5. Add ⅓ of the sour cream, then sprinkle with ⅓ of the cheese.
  6. Repeat the layers (tortillas, meat, sour cream, cheese) two more times, ending with cheese on top.

3. Bake

  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
  • Let it rest for 10 minutes before slicing to help it hold its shape.

4. Serve
