- 1 lb boneless, skinless chicken breasts (finely diced or ground)
- 2 large eggs
- ½ cup all-purpose flour
- ½ cup breadcrumbs (for extra crispiness)
- ½ cup shredded mozzarella or cheddar cheese
- 2 tbsp mayonnaise or sour cream (for tenderness)
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1 tsp paprika
- ½ tsp dried oregano
- Salt & pepper to taste

🍳 Instructions
- Prep chicken: Dice chicken into very small pieces (or use ground chicken). Place in a mixing bowl.
- Make batter: Add eggs, flour, breadcrumbs, cheese, mayo/sour cream, garlic, green onions, paprika, oregano, salt, and pepper. Mix well until a thick mixture forms.
- Heat oil: In a large skillet, heat 2–3 tbsp of oil over medium heat.

- Refrigerator: Store cooled fritters in an airtight container for up to 3 days. Reheat in a skillet or oven at 350°F (175°C) for best crispiness.
- Freezer: Freeze cooked fritters in a single layer on a baking sheet, then transfer to a freezer bag. Keep up to 2 months. Reheat directly from frozen in the oven at 375°F (190°C) for 15–20 minutes.
