Cheesy Hamburger Potato Casserole

Ingredients

  • 1 ½ lbs ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 6 medium potatoes, thinly sliced
  • 2 cups shredded cheddar cheese (divided)
  • 2 Tbsp olive oil or butter

Instructions

  1. Cook the Beef
    In a large skillet, heat olive oil or butter. Add ground beef, onion, and garlic. Cook until beef is browned and onion is softened. Drain excess fat. Stir in salt, pepper, and paprika.
  2. Prepare the Sauce
    In a small bowl, whisk together cream of mushroom soup and milk until smooth.
  3. Assemble the Casserole
    • Grease a 9×13-inch baking dish.
    • Layer half of the sliced potatoes on the bottom.
    • Spread half of the beef mixture over the potatoes.
    • Pour half of the soup mixture on top, then sprinkle with 1 cup cheddar cheese.
    • Repeat layers with remaining potatoes, beef, soup mixture, and finish with the rest of the cheese.
  4. Bake
    Cover with foil and bake at 375°F (190°C) for 50–60 minutes, or until potatoes are fork-tender. Remove foil in the last 10 minutes to allow cheese to melt and brown.

Storage

  • Refrigerate leftovers in an airtight container for up to 3–4 days.
  • Reheat in the oven at 350°F until warmed through, or in the microwave for quick servings.
  • Freeze (before baking) for up to 2 months. Thaw overnight in the refrigerator before baking.
