  • 2 medium cucumbers, thinly sliced
  • 1/4 cup (25 g) red onion, thinly sliced
  • 1/4 cup (15 g) chopped fresh dill (or 1 tsp dried)
  • 1/2 cup (120 g) Greek yogurt or sour cream
  • 2 Tbsp (30 g) mayonnaise
  • 1 Tbsp (15 ml) lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard (optional for extra tang)
  • Salt & black pepper, to taste
  • 1/4 tsp garlic powder (optional)

🥣 Instructions

  1. Prepare the shrimp:
    If using raw shrimp, boil or sauté them in a bit of olive oil for about 2–3 minutes per side until pink and opaque. Let cool.
  2. Slice the cucumbers:
    Thinly slice cucumbers (you can use a mandoline for even slices). Lightly salt them and let sit for 5 minutes to draw out excess water, then pat dry with paper towels.
  3. Make the dressing:
    In a bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
  4. Combine:
