Ingredients

IngredientQuantity
Chicken breasts, boneless & skinless, finely shredded2
Mayonnaise¾ cup
Green onions, thinly sliced2
Dried minced onion2 tablespoons
Garlic salt1 teaspoon
Light brown sugar, packed3 tablespoons
Red seedless grapes, thinly sliced½ cup
Sliced almondsâ…“ cup
Salt & pepperTo taste
Burrito-sized flour tortillas4

Instructions

1. Prepare the Filling

In a large bowl, combine the shredded chicken with mayonnaise until creamy. Add green onions, dried minced onion, garlic salt, brown sugar, grapes, and almonds. Mix well until everything is evenly incorporated. Taste and adjust with salt and pepper.

2. Assemble the Pinwheels

Lay one tortilla on a flat surface. Spread about ¼ of the chicken mixture evenly, leaving a ½-inch border at one end. Roll the tortilla tightly into a log. Repeat with the remaining tortillas and filling.

3. Chill

Wrap each rolled tortilla tightly in plastic wrap, tucking the ends underneath. Refrigerate for at least 4 hours (or overnight) to allow the pinwheels to set—this makes them much easier to slice.

4. Slice & Serve

Unwrap the chilled logs. Using a serrated knife, cut each log into ½-inch slices. Arrange on a platter and serve cold.

Cooking Notes

  • Use soft, pliable tortillas to prevent cracking while rolling.
  • Avoid overfilling—the tighter the roll, the neater the slices.
  • Wrapping tightly in plastic wrap is key for keeping their shape.
  • Customize with add-ins like apples, raisins, walnuts, or pecans for new flavor twists.
