Introduction
This dish is the perfect answer to a busy weeknight craving: tender, juicy steak bites and crispy golden potatoes tossed in a rich garlic butter sauce. Cooking in the air fryer gives you that irresistible sear and crunch without the fuss of stovetop splatter. It’s a complete, satisfying meal in one, ready in under 30 minutes.
Ingredients
- 1 lb sirloin steak (or ribeye), cut into 1-inch cubes
- 1 lb baby potatoes, halved or quartered if large
- 3 Tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
Garlic Butter Sauce:
- 3 Tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 Tbsp fresh parsley, chopped
Instructions
- Prepare the Potatoes
Toss potatoes with 2 Tbsp olive oil, ½ tsp salt, ¼ tsp black pepper, paprika, and garlic powder. Place in air fryer basket. Cook at 400°F (200°C) for 12–15 minutes, shaking halfway through, until golden and tender. - Season the Steak
While potatoes cook, toss steak bites with 1 Tbsp olive oil, remaining salt, and pepper. - Add Steak to the Basket
After potatoes are partly cooked, add steak bites on top. Air fry at 400°F for 6–8 minutes, shaking the basket halfway, until steak reaches desired doneness. - Make Garlic Butter
In a small bowl, stir together melted butter, minced garlic, and parsley. - Finish & Serve
Toss steak bites and potatoes with garlic butter before serving. Serve hot.
Storage
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the air fryer at 350°F for 3–4 minutes to keep them crispy.
- Not ideal for freezing, as potatoes may lose texture.
