Classic 7UP Pound Cake
Ingredients
- 3 cups granulated sugar
- 1 1/2 cups unsalted butter, softened (3 sticks)
- 5 large eggs
- 3 cups all-purpose flour
- 2 teaspoons lemon zest (optional, for extra citrus flavor)
- 3/4 cup 7UP soda (not diet)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
Instructions
Step 1: Prep the oven
- Preheat oven to 325°F (163°C).
- Grease and flour a 10-inch Bundt pan (or tube pan).
Step 2: Cream the butter and sugar
- In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 5 minutes). This step is key for a tender cake.
Step 3: Add eggs
- Add eggs one at a time, beating well after each addition.
Step 4: Mix in flour and soda
- Gradually add flour, mixing on low speed.
- Pour in 7UP, lemon zest, vanilla, and lemon extract. Mix until just combined—don’t overbeat.
Step 5: Bake
- Pour the batter into the prepared pan.
- Bake for 60–75 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and serve
- Allow the cake to cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.
Optional Glaze (Classic Lemon Glaze)
- 1 cup powdered sugar
- 2–3 tablespoons 7UP
- 1 teaspoon lemon juice
Whisk together until smooth, then drizzle over the cooled cake.
