Classic 7UP Pound Cake

Ingredients

  • 3 cups granulated sugar
  • 1 1/2 cups unsalted butter, softened (3 sticks)
  • 5 large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons lemon zest (optional, for extra citrus flavor)
  • 3/4 cup 7UP soda (not diet)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Instructions

Step 1: Prep the oven

  • Preheat oven to 325°F (163°C).
  • Grease and flour a 10-inch Bundt pan (or tube pan).

Step 2: Cream the butter and sugar

  • In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 5 minutes). This step is key for a tender cake.

Step 3: Add eggs

  • Add eggs one at a time, beating well after each addition.

Step 4: Mix in flour and soda

  • Gradually add flour, mixing on low speed.
  • Pour in 7UP, lemon zest, vanilla, and lemon extract. Mix until just combined—don’t overbeat.

Step 5: Bake

  • Pour the batter into the prepared pan.
  • Bake for 60–75 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cool and serve

  • Allow the cake to cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.

Optional Glaze (Classic Lemon Glaze)

  • 1 cup powdered sugar
  • 2–3 tablespoons 7UP
  • 1 teaspoon lemon juice

Whisk together until smooth, then drizzle over the cooled cake.
