Ingredients
For the Filling:
- 1 lb (450g) ground beef (or ground turkey)
- 1 small onion, chopped
- 1 packet taco seasoning mix (or 2 tbsp homemade)
- ¾ cup (180ml) water
- 1 cup (250g) canned black beans, drained and rinsed (optional)
- 1 cup (250g) corn kernels (optional)
- 1 ½ cups (360ml) salsa or taco sauce
For the Layers:
- 6 large flour tortillas (or corn tortillas, cut to fit your dish)
- 2 cups (200g) shredded cheddar or Mexican cheese blend
- 1 ½ cups (360ml) sour cream
Optional Toppings:
- Sliced green onions
- Diced tomatoes
- Chopped cilantro
- Sliced black olives
- Jalapeños

Instructions
1. Cook the Beef
- In a large skillet, cook ground beef and chopped onion over medium heat until browned.
- Drain any excess fat.
- Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
- Stir in black beans, corn, and salsa. Mix well and remove from heat.
2. Layer the Lasagna
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch (23×33 cm) baking dish.
- Place 2 tortillas on the bottom (cut to fit).
- Spread ⅓ of the meat mixture evenly over the tortillas.
- Add ⅓ of the sour cream, then sprinkle with ⅓ of the cheese.
- Repeat the layers (tortillas, meat, sour cream, cheese) two more times, ending with cheese on top.
3. Bake
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Let it rest for 10 minutes before slicing to help it hold its shape.
4. Serve
Top with green onions, tomatoes, cilantro, or jalapeños, and serve warm with a side of rice or a fresh salad.
